3 limes, (juice and zest)
1/2 red onions, chopped
3 peaches, seedless and diced into small cubes
1 tablespoon tarragon, chopped
slices toast, or crackers

Slice the scallops into 3 or 4 horizontal slices each.
Place the scallop slices with the salt and the zest and juice of the lemon, the onion, the peach, and the tarragon.
Stir and refrigerate to chill.
