Heat the water over medium heat until boiling, cook the shrimp for 3-4 minutes or until they turn pink. Remove from the water and place in a bowl with ice to stop the cooking.
In boiling water, add the rice noodles until they are soft, remove from the water, and set aside. Meanwhile, soak the rice paper in hot water until soft.
Place mint, shrimp, noodles, and carrots on each sheet. Roll up and serve with peanut sauce.
