Vietnamese Rolls

Rice paper filled with mint, shrimp, rice noodles, lettuce, and carrot accompanied by a peanut or soy sauce.

  • 1 kilo medium-sized shrimp, peeled, cleaned, and washed
  • 12 rice leaf, Asian
  • 2 cups rice noodle, Asian
  • 1 bunch peppermint
  • 2 cups butterhead lettuce
  • 2 cups carrot , chopped
  • 1 jar peanut sauce

  • Heat the water over medium heat until boiling, cook the shrimp for 3-4 minutes or until they turn pink. Remove from the water and place in a bowl with ice to stop the cooking.
  • In boiling water, add the rice noodles until they are soft, remove from the water, and set aside. Meanwhile, soak the rice paper in hot water until soft.
  • Place mint, shrimp, noodles, and carrots on each sheet. Roll up and serve with peanut sauce.
