Fried Seafood Platter

  • 1 cup Tres Estrellas® rice flour, for the batter
  • 2 eggs, for the batter
  • 3/4 cups cow's milk, for the batter
  • 1 tablespoon garlic powder, for the batter
  • 1 tablespoon parsley, finely chopped, for the batter
  • salt and pepper
  • 300 grams squid, in rings
  • 300 grams shrimp, clean and shelled
  • 300 grams saw fish
  • 1 cup carrot, cut into strips
  • 1 cup pumpkin, cut into medium-thick slices
  • 1 cup broccoli, cut into small pieces
  • vegetable oil, for frying
  • 1 avocado, for the dip
  • 1/2 cups sour cream, for the dip
  • 1/2 cups cream cheese, for the dip
  • 2 serrano chiles, for the dip
  • 2 tablespoons lime juice, for the dip
  • lime, to accompany

  • In a bowl, mix Tres Estrellas® rice flour with eggs, milk, garlic powder, parsley, and season with salt and pepper until you have a homogeneous mixture.
  • Using tongs, dip the seafood and vegetables into the previous preparation and fry in hot oil until golden and crispy. Drain on paper towels to remove excess grease. Set aside.
  • For the dip, blend the avocado with cream, cream cheese, serrano chili, lime juice until you achieve a smooth mixture. Season to taste.
  • Serve the battered seafood and vegetables on a plate alongside the avocado dip, and accompany with lemons.
