Garlicky Crazy Esquites with Marrow

This crazy esquites recipe is very special, as it is made with marrow and guajillo chili. Its flavor will surprise you! They are delicious, cooked with beef broth, and served with white cheese, and best of all, the Salsa Huichol® from the Botanas line. Enjoy!

  • 2 tablespoons vegetable oil
  • 300 grams bone marrow, large pieces
  • coarse salt
  • 1/2 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 2 guajillo chiles, seedless, in rings
  • 4 cups white corn kernels
  • 5 cups beef broth
  • 1 tablespoon epazote, finely chopped
  • lime juice
  • mayonnaise
  • fresh white cheese
  • Salsa Huichol® sauce for snacks

  • Pour vegetable oil into a hot saucepan, then add beef marrow fat and coarse salt. Sauté for 5 minutes.
  • In the same saucepan and with the oil released from the marrow, sauté the onion along with the garlic over medium-low heat until it has a brighter color, then add the guajillo chili. Stir to combine and incorporate the white corn kernels, cooking for 3 minutes.
  • Pour in the beef broth, add the epazote, and return the marrow bones. Cook on low heat for 20 minutes or until the corn is soft. Adjust the seasoning with a little salt.
  • Serve the crazy esquites in a cup with marrow bones. Add a little lime juice, mayonnaise, white cheese, and pour Salsa Huichol® from the Botanas line to taste.
