Gluten-Free Tomato Pizza with Goat Cheese

  • 2 1/2 cups organic amaranth Aires De Campo®
  • 1/2 cups organic rolled oats Aires De Campo®
  • 5 grams dry yeast
  • 1/4 cups water, warm, to hydrate the yeast
  • 2 tablespoons olive oil
  • 1 tablespoon Aires De Campo® fine salt
  • 1/4 cups water
  • 1 cup tomato sauce
  • 1 cup Mozzarella cheese
  • 1/2 cups Goat cheese Aires De Campo®
  • 1 cup cherry tomato Aires De Campo®, in halves
  • 1/2 cups Aires De Campo® praline organic walnut
  • parsley, for garnish

  • Preheat the oven to 200°C.
  • Process the Organic Amaranth Aires de Campo® with the Organic Oats in Flakes Aires de Campo® in a food processor until you obtain a fine flour.
  • Hydrate the yeast with warm water and let it rest for 10 minutes.
  • Add the oat and amaranth mixture to a mixer with olive oil, Fine Salt Aires de Campo®, the previously hydrated yeast, and water. Beat for 10 minutes until you obtain a smooth and firm dough. If necessary, add more water as the dough requires.
  • Place the dough in a previously greased bowl and let it ferment for 1 hour or until it doubles in size.
  • Roll out the dough to 3mm thick and place it on a pizza tray.
  • Add the tomato sauce, mozzarella cheese, Aires de Campo® goat cheese, Aires de Campo® cherry tomatoes, and Aires de Campo® Candied Organic Walnuts.
  • Bake for 12 minutes or until cooked.
  • Garnish with parsley and enjoy.
