  • 1 cup deli ham, diced
  • 3/4 cups canned pineapple, diced
  • 1 cup Manchego cheese, diced
  • 3 tablespoons ground chipotle chile
  • salt

  • 250 grams puff pastry
  • flour
  • egg, for brushing
  • dried oregano, for sprinkling

  • Preheat the oven to 200° C.
  • In a bowl, mix the ham with the canned pineapple, manchego cheese, chipotle chili, and season with salt and pepper.
  • Roll out the puff pastry on a floured surface to a thickness of 5 mm. Cut rectangles 8 cm wide by 32 cm long.
  • Place a little of the ham mixture in the center of one of the rectangles, brush the edges with egg, and cover with another rectangle. Use a fork to seal the pockets.
  • Brush each pocket with egg and sprinkle with oregano. Place them on a greased and floured baking sheet. Bake for 20 minutes or until golden brown.
  • Remove from the oven, let cool slightly, and serve.
