Hibiscus Tacos

A delicious vegetarian recipe of hibiscus flower with tomatillo and an avocado salsa to accompany. Try a tasty, different dish that you will love.

  • 250 grams hibiscus flower
  • 1/2 kilos corn tortillas
  • 1/2 red onions, cut into julienne
  • 4 green tomatoes
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 1 avocado
  • 1/2 cups water
  • 1 lime
  • 2 tablespoons fresh cilantro
  • salt

  • Hydrate the hibiscus in boiling water for ten minutes. Remove from water and drain.
  • In a skillet, heat a tablespoon of vegetable oil and brown the quartered tomatillo as well as the chopped garlic cloves. Remove from heat and blend.
  • In the same skillet, brown the red onion with 1 tablespoon of vegetable oil. Once well browned, add the hibiscus and cook for 30 more seconds.
  • Add the green tomato broth and simmer for 5 minutes.
  • Place 2 tablespoons of the mixture in each previously warmed tortilla and serve.
  • Blend the avocado, water, lime juice, cilantro, and salt for the salsa.
