Huitlacoche Turnovers

  • Pam® butter, canola oil butter flavor spray
  • cooking spray, PAM Original
  • 500 grams puff pastry
  • 500 grams huitlacoche, cleaned and chopped
  • 1/4 onions, finely chopped
  • 3 teaspoons garlic, finely chopped
  • 1 sprig epazote
  • 1 cup corn kernels
  • 1 teaspoon chicken bullion
  • 1 egg
  • salt
  • pepper

  • Preheat the oven to 180°C.
  • Spray a skillet with 2 shots of PAM® Original and sauté the onion, garlic, and huitlacoche, simmering, add the corn along with the epazote sprig. Season with the consommé, and salt and pepper to taste. Cool and set aside.
  • Roll out the puff pastry with a rolling pin, use a glass to cut circles, spray each circle with a shot of PAM® Butter and place a tablespoon of the filling, close and seal the edge with a fork.
  • Beat the egg and brush each turnover on top, spray a baking sheet with 2 shots of PAM® Butter and arrange the turnovers in rows.
