Melted Cheese with Bacon and Poblano Chiles

  • 1 cup Poblano chile strips

  • Preheat the oven to 170°C.
  • In a skillet, fry the bacon until crispy. Set aside.
  • Add the chiles and garlic to the same fat from the bacon and cook for a few minutes.
  • Chop the bacon into small pieces. Add half of the bacon in one layer and half of the chiles in another layer in a baking dish. Sprinkle with cheese. Top with the remaining bacon and chiles.
  • Bake for 10 to 12 minutes. Serve with tortilla chips or warm flour tortillas.
