Delicious appetizer of melted cheese prepared with chorizo or with strips. Melted cheese is usually served on clay dishes, accompanied by flour tortillas and a spicy sauce.
1/2 cups Poblano chile, roasted, peeled, and cut into thin strips
1 tablespoon butter
60 grams chorizo, fried and crumbled
2 cups cheddar cheese, shredded

Sauté the strips of chili in 1 tablespoon of butter, lightly season with salt and pepper, and set aside.
Sauté the chorizo in pieces and set aside.
Lightly grease 2 small baking dishes or ramekins. In one, place half of the cheese and half of the chili strips. In the other, place the rest of the cheese and half of the chorizo. Cover the dishes with aluminum foil and heat on low until the cheese begins to melt (about 3 minutes). Uncover and cook for another 2 minutes or until the cheese is completely melted. Add the remaining strips of poblano chili and the remaining chorizo to their respective dishes.
Serve hot accompanied by flour tortillas so everyone can make their own tacos. It can also be served with a Mexican hot sauce.
