Battered Jalapeño Chiles Stuffed with Cheese

The jalapeño pepper is one of the most used in Mexico for its excellent flavor, as it is an inexpensive pepper and, especially, it is perfect for stuffing with cream cheese. This preparation is an ideal snack when your friends come to visit you at home. You will see that they will love it.

  • 20 Jalapeño chiles
  • 3 eggs
  • 1 cup vegetable oil
  • 300 grams cream cheese
  • water, necessary amount
  • 1/4 cups white vinegar
  • all-purpose wheat flour, necessary amount

  • Wash the chiles and leave them overnight in water with vinegar; this is to reduce their spiciness.
  • The next day, place them on a kitchen towel to dry well, then place them directly over the flame of the burner to start toasting the chiles.
  • Once they are toasted (with the skin burnt), we will place them in a plastic bag to sweat; we can use a cloth towel to speed up the process. Once they cool down a bit, we will take them out of the bag and under running water, we will remove the toasted or burnt skin. With a knife, make a small opening to remove the seed and vein completely (if you want them to be spicy, leave the vein).
  • Once they are deveined and seedless, we will dry them a bit with a kitchen towel, then we will place pieces of Philadelphia cheese through the opening of our jalapeño chiles and close them with the help of toothpicks.
  • We will place the 3 egg whites in a bowl and beat very well until they harden, then we will add the yolks one by one and continue beating; this is to batter our chiles.
  • Now, place a pan with oil over medium heat.
  • On a plate, place some flour, take each chile and coat it with flour, then dip it in the beaten egg and into the hot oil in the pan until golden, making sure they don't burn; when they are golden, we will take them out and place them to drain a bit to remove the excess oil.
