We gave this snack a twist and turned it into crazy corn! We grilled them and prepared them with ingredients you love, like seasoned potatoes, piquín chili, cheese, lime, and the special touch of McCormick® chipotle mayonnaise.
To clean the corn: Remove the outer leaves, the silk, and the tip of the corn with a knife. Leave the inner layer of leaves attached to the cobs to keep them hydrated and give them flavor.
In a large pot, arrange the corn cobs and add water to cover them. Add the bundle of epazote, cover the pot, and cook for 15 to 30 minutes.
Remove the corn from the water and take off the leaves. Carefully insert a thick wooden stick into each cob.
Heat a skillet or grill over high heat and spread a bit of vegetable oil. Grill the corn for about 3 minutes, remove, and set aside.
Spread the hot corn with enough McCormick® with chipotle, sprinkle a bit of seasoned potato chips, cheese, piquín chili, lime juice, and McCormick® with chipotle. Enjoy the crazy corn!
