Delicious Street Corn

These traditional Street Corns are a typical Mexican snack. The whole cob of corn is boiled and prepared with mayonnaise and chili piquín. You can also add lime.   • 8 cups water
  • 6 ears corn
  • 2 sprigs epazote
  • 6 tablespoons low-fat mayonnaise
  • 1 cup queso fresco, grated
  • piquín chile
  • salt
  • lime

  • In a pot over medium heat, pour the water and cook the corn with the epazote branches.
  • Heat a griddle over high heat and roast the corn until charred. Remove the corn from the griddle.
  • On a board, insert the wooden sticks into the corn. Set aside.
  • Spread the corn with a little low-calorie mayonnaise, sprinkle fresh cheese, add chili piquín to taste, and a few drops of lime. You can finish with a touch of salt.
