Esquites with Grasshoppers

The esquites are one of the most popular snacks throughout the country. For example, in Mexico City, there are street vendors that serve them with special sauces, with chicken feet, or even with bone marrow. In Monterrey, esquites are known as corn in a cup, and in Oaxaca, many vendors offer esquites with grasshoppers.   • 1/4 cups butter, in medium cubes
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 4 cups corn kernel
  • 5 árbol chiles
  • 2 liters water
  • 1 sprig epazote
  • salt
  • mayonnaise
  • panela cheese, grated
  • chapulines, toasted
  • chile powder

  • Melt the butter in a pot over medium heat, add the onion and garlic, and sauté for 5 minutes. Add the corn and jalapeño pepper and cook for 5 more minutes.
  • Add the water, epazote, and salt, cover, and cook on low heat for 25 to 30 minutes. Make sure that not all the liquid evaporates.
  • Serve the esquites in a bowl and decorate with mayonnaise, panela cheese, chili powder, and grasshoppers.
