Golden Carrot and Cheese Tacos

Golden carrot and cheese tacos are very quick, easy to prepare, and economical; children love them, and it’s a fun way for them to eat carrots.

  • corn tortillas
  • 3 carrots
  • 100 grams queso fresco
  • 1/4 cups oil
  • 1 cup lettuce, disinfected and sliced
  • cream

  • Peel and grate the carrot and fresh cheese, stir these ingredients together.
  • Place a portion of the previous mixture on a tortilla and roll it up.
  • Heat the oil, once hot place the tacos and let them cook for one minute, turning them carefully so they don't unravel, to brown on all sides.
  • Drain the excess oil and place them on a plate, with a bit of lettuce and cream on top.
