Golden Quequitas

This recipe came about one day when I was at the end of the pay period and had few things in the pantry, so I had these ingredients at home; we prepared these delicious quequitas, and now they are a family and friends' favorite. Every time I see family and friends, they ask me to make them.

  • 1/2 kilos masa harina
  • 1 cup wheat flour
  • 1 teaspoon garlic, ground
  • 1 pinch ground black pepper
  • 1 liter water
  • Oléico® safflower oil
  • 1/2 kilos ranchero cheese, grated
  • 1 cabbage, washed, disinfected, and finely chopped
  • 1/2 kilos canned refried black beans
  • 12 tomatillos, cooked
  • 3 serrano chiles, cooked
  • 1 white onion
  • 1 clove garlic
  • 1/2 cups fresh cilantro, washed, disinfected, and chopped
  • 1/2 kilos cream
  • salt , to taste
  • 1 teaspoon garlic powder

  • In a bowl, combine maseca, wheat flour, salt, ground garlic, and pepper.
  • Add water until you get a dough similar to that for tortillas.
  • Make balls the size of a meatball, and flatten them using a homemade tortilla press.
  • Fill with grated cheese, fold, and let rest for 20 minutes.
  • In a skillet with hot Aceite Oléico® over high heat, fry the quequitas, remove them from the heat, and place them on absorbent paper to remove excess oil.
  • For the sauce, blend the green tomatoes, serrano chiles, onion, garlic, cilantro, and salt to taste. You can cook the chiles and tomatoes on a griddle or in water.
  • Spread refried beans on the quequitas, add cabbage, sauce, cream, and serve.
