Bring a liter of water to a boil in a saucepan. When it reaches a boil, submerge the eggs and let them cook for 10 minutes or until the shell begins to crack. Turn off the heat. Drain the water and let the eggs cool before peeling them.
Cut the tomato into small cubes and the onion into thin slices. Place them in a saucepan and add a tablespoon of Oleic Oil® to fry them. Add salt to taste. Cover and let cook over medium heat for about ten minutes or until the tomato is cooked and the onion is translucent. Set aside.
Add half a liter of water and salt to taste to the corn flour. Knead for two or three minutes. Form balls of approximately 40-50 grams. Place one at a time in the tortilla press and flatten them, covering the ball with plastic to easily detach it from the press afterward.
Prepare more balls until the dough is finished, placing the made tortillas on a cloth napkin while heating the oil.
Heat enough Oleic Oil® in a skillet to fry the salbutes. Once hot, fry the salbutes for a few minutes on both sides until the dough is cooked. Drain on absorbent paper.
Place the egg on the salbutes and pour the fried tomato on top. Serve immediately.
