Mexican Gazpacho

As gazpacho spreads as a food around the world, it undergoes modifications in some ingredients, either due to adaptations to local tastes, ingredient availability, or simply the whims of the cooks. The gazpacho that is a hallmark of the city of Morelia, Michoacán, Mexico, consists of finely chopped fruit (typically jicama, mango, and pineapple; some also add watermelon) to which you can add onion, vinegar, cheese, chili powder, hot sauce, lemon juice, and orange juice.

  • 1 cucumber
  • 1 mango
  • 1 pineapple, small
  • 1 watermelon , small
  • 1 lemon
  • chile powder
  • 1 onion

  • Peel the jicama and cut it into small sticks.
  • Cut off the ends of the cucumber, remove the seeds, and cut into sticks.
  • Cut the mango into small cubes.
  • Peel the pineapple, remove the core, and cut it into small cubes.
  • Chop the watermelon and onion into cubes.
  • Squeeze the lemon, add salt and chili piquí.
