1/2 cups olive oil
6 cloves garlic
15 scallions, without tails
1 kilo carrot , sliced
4 cups cider vinegar
salt and pepper

Heat the oil in a pot over medium heat and sauté the garlic, onion, and carrot for 5 minutes.
Let it cool and add the vinegar, simmering for 30 minutes. The carrots should be tender but still crunchy.
Season with salt and pepper to taste.
