Pickled Carrots

Delicious pickled carrots perfect for accompanying all your dishes, try this recipe, it's very easy to make.

  • 1/2 cups olive oil
  • 6 cloves garlic
  • 15 scallions, without tails
  • 1 kilo carrot , sliced
  • 4 cups cider vinegar
  • salt and pepper

  • Heat the oil in a pot over medium heat and sauté the garlic, onion, and carrot for 5 minutes.
  • Let it cool and add the vinegar, simmering for 30 minutes. The carrots should be tender but still crunchy.
  • Season with salt and pepper to taste.
