Potato and Cheese Gorditas

A more traditional and Mexican snack like gorditas, but in this recipe, they are made with potato and Oaxaca cheese for a different and delicious flavor; you can accompany them with lettuce, cream, and salsa, or enjoy them plain as they are also delicious.

  • masa dough, You can make them yourself or buy them at a tortilla shop.
  • 4 potatoes, large
  • oaxaca cheese
  • salt
  • vegetable oil
  • sour cream

  • Boil the potatoes with salt.
  • Shred the Oaxaca cheese.
  • To the already prepared dough, add a little salt and a few drops of water, knead it so that it's soft and easy to work with.
  • When the potatoes are well cooked, carefully remove the skin so you don't burn yourself.
  • Mash the potatoes in such a way that you can still feel some small pieces, in other words, don't turn the potatoes into puree.
  • Add salt and cream to taste to the potatoes and mash them with a spoon or wooden spatula, so that the ingredients combine.
  • Make dough balls, placing a good spoonful of potato and a bit of shredded cheese in the middle, form the gorditas in such a way that the filling stays inside for a more aesthetic presentation.
  • Put them in a skillet with plenty of preheated oil, let them sit for a while, and flip them occasionally.
  • When they are ready, set them aside to drain, so they are not too greasy, in a container with napkins or a large strainer to filter out the excess oil.
