Ramen with Esquites

  • 2 cups white corn kernels
  • 1 sprig epazote
  • 2 tablespoons butter
  • 2 tablespoons mayonnaise
  • chicken broth
  • 2 tubs instant soup, ramen style

  • chipotle mayonnaise
  • Cotija cheese, grated
  • piquín chile powder
  • Doritos® Nacho Cheese Flavored Tortilla Chips, chopped

  • Place the corn kernels and epazote in a bowl, cover it with plastic wrap, and heat in the microwave for 4 minutes.
  • Melt the butter, add the mayonnaise and corn kernels in a pot over medium heat, then pour in the chicken broth, add the ramen and salt. Cover the pot and cook for 3 minutes or until the ramen is cooked.
  • Serve the ramen with esquites in a bowl, garnish with chipotle mayonnaise, grated cheese, chili piquín, and nacho Doritos.
