Mini Corn with Bacon Mayonnaise

This is a great recipe for preparing a very tasty and simple corn side dish or appetizer. To prepare these mini corns, we recommend buying large grain corn and ensuring they are well cooked using a toothpick. During these patriotic festivities, you will surprise your guests with these little corns with fried bacon mayonnaise.   • 3 ears corn, cut into medium pieces
  • salt, for the corn
  • 1 cup mayonnaise
  • 1 tablespoon mustard, for the mayonnaise
  • 1 cup bacon, in small cubes and golden brown, for the mayonnaise
  • 3 tablespoons lime juice, for the mayonnaise
  • pepper, for the mayonnaise
  • 1 cup queso fresco, shredded for the mayonnaise
  • 1/2 cups chile powder, for the mayonnaise
  • parsley, finely chopped, for garnish
  • lime, for garnish

  • Boil water in a small pot, add the corn and salt; let cook for 25 minutes or until the corn is sufficiently tender. Cool and set aside.
  • In a bowl, add the mayonnaise, mustard, bacon, lemon juice, and pepper; mix until perfectly combined. Set aside.
  • On a cutting board, place the corn, insert wooden sticks into each one, and cover with the bacon mayonnaise, fresh cheese, and chili powder. Serve with parsley and lemon to taste. Enjoy!
