Mini mushroom quiche

An easy way to prepare a mushroom quiche without having to make the dough. In this case, it is replaced with sliced bread.

  • 10 slices sandwich bread, very soft
  • 1 stick butter, of 100 grams
  • 3 tablespoons shallot, chopped
  • 1 1/2 tablespoons butter
  • 1/2 button mushrooms, thinly sliced
  • 1/8 teaspoons tarragon
  • 1 tablespoon flour
  • 1/2 cups sour cream
  • 1/2 cups chicken broth
  • 1/2 teaspoons Worcestershire sauce
  • 2 teaspoons lime juice
  • 2 tablespoons parsley, chopped and Chinese parsley for decoration

  • With a sharp knife, remove the crust from the bread and flatten it with a rolling pin, melt butter and use a brush to spread it on both sides of the bread slices and arrange them in some quiche molds.
  • Bake at 190º for 20 minutes or until the edges are slightly golden. They can be made a day in advance and kept in an airtight container.
  • In a pan, place the tablespoon of butter, sauté the shallot over low heat, add mushrooms, reserving some for decoration! Add salt and pepper, cook until the liquid is absorbed. Add flour, cook for 2 minutes, add broth and cream.
  • Divide it into the small molds, decorate with slices of mushroom. Heat in the oven at 190º for 10 minutes. Upon removing from the oven, garnish with Chinese parsley.
