  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon shallot
  • 1 cup whipping cream, fried
  • 1/2 cups white wine
  • 1 cup Manchego cheese
  • 1 cup Gouda cheese
  • 2 tablespoons blue cheese
  • 1/2 cups canned mushrooms , drained
  • 2 tablespoons parsley, finely chopped

  • Melt the butter in a pot over medium heat, add the flour and shallot, and cook over low heat for 4 minutes or until slightly golden.
  • Add the heavy cream and white wine and cook over medium heat for 5 minutes. Add the manchego cheese, gouda cheese, and blue cheese, and mix until the cheeses have melted.
  • Add canned mushrooms and cook for 2 more minutes.
  • Serve the fondue in the same pan it was prepared in, garnish with parsley, and accompany with slices of bread.
