  • 3/4 cups bacon, in small cubes
  • 1/2 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1 cup spinach, in thin strips
  • 3/4 cups sun-dried tomatoes, finely chopped
  • 3 cups canned mushroom
  • 1/2 cups cashews, finely chopped
  • salt and pepper
  • flour
  • 1 kilo puff pastry
  • 1 cup Manchego cheese
  • 1 egg
  • parsley, dry, for decoration

  • Cook the bacon in a hot skillet for 3 minutes. Add the onion, garlic, and spinach, and cook for 2 more minutes. Finally, add the sun-dried tomatoes, mushrooms, cashews, salt, and pepper, mix, and cook for a couple more minutes. Let it cool.
  • Roll out the puff pastry on a flat surface with a little flour, place the filling on one edge, sprinkle with cheese, and roll it up. Transfer to a baking tray, brush with egg, sprinkle with parsley, and bake at 180 °C for 40 minutes.
  • Cut the mushroom puff pastry into slices and serve with salad.
