Peruvian Causas

Peruvian causa, a base of potato or sweet potato topped with fish, chicken, or meat.

  • 3 cups yellow potato, cooked and mashed
  • 1/2 cups yellow ají paste
  • 2 limes
  • 1/4 cups vegetable oil
  • 300 grams tuna loin, fresh
  • 1/2 cups mayonnaise
  • 2 tablespoons hot chili sauce
  • chives, chopped for garnish

  • Mix in a deep bowl the potato, the yellow chili, the lemon, and the oil to make the masa for the causas. Season with salt and pepper and mix well with your hands.
  • Cut the tuna into cubes and season with salt and pepper.
  • Mix well in another bowl the mayonnaise and the chili and add to the tuna cubes.
  • Form small portions of causa and serve them on a long plate, garnishing with the green onion stalks.
