1 plantain
salt , and ground pepper (to taste)
1 cup breadcrumbs
vegetable oil , (as needed)
3 tablespoons fresh cilantro, chopped
1 tablespoon peppermint, chopped
1 tablespoon extra virgin olive oil
1 egg
1 stick Philadelphia® cream cheese
200 grams cherry tomato

Boil the plantain in a pot with water until soft.
In a bowl, mash the plantain with a fork and mix it with cilantro, the egg, cream cheese, chopped cherry tomatoes, mint, salt, and pepper.
Form patties and coat them with breadcrumbs, then fry in a pan with hot oil.
Remove excess grease with a paper towel and serve.
