1 package wholemeal bread
1/2 kilos carrot
1 bunch celery
1 cucumber
black olives
cherry tomatoes
leaves green lettuce

Remove the edges of the slices of bread; the number will depend on how big you want to make the porcupine.
Knead with your hands to shape each part of the body. Use my photograph as a guide.
Cut sticks from each vegetable and carefully insert them into the back of the body.
Cut an olive in half and place it as a nose.
Slice two olives in half and use them as eyes. Do the same with the cherry tomato.
Place a bed of green lettuce to bring life to the dish and make it look like a forest.
Serve with your kids' favorite dressing.
