Potato and Ham Croquettes

Prepare these delicious potato and ham croquettes with manchego cheese that your kids will love. They are easy to make and you can prepare them in advance to help out with your kids' lunch. They will surely love them.

  • 3 potatoes, cooked and warm
  • 1 cup Manchego cheese, grated
  • 1 cup cream cheese
  • 1 cup deli ham, cut into cubes
  • 1/4 cups fresh cilantro, finely chopped
  • 1 pinch salt
  • 1 pinch pepper
  • flour, for breading
  • egg, for breading
  • breadcrumbs, for breading
  • vegetable oil, for frying

  • In a bowl, mash the cooked potatoes until smooth, add the cheeses, ham, cilantro, salt, and pepper, and mix well. Form balls of approximately 15 grams with the help of your hands.
  • Bread the croquettes by passing them through flour, beaten egg, and breadcrumbs.
  • Heat the oil in a deep pot and fry the balls until golden brown, remove from the oil and eliminate excess grease with paper towels.
  • Serve the croquettes with a little salad and dressing of your choice.
