Roasted Tomato Bruschetta

A light recipe ideal for a starter in a family meal.

  • 1 tomato , chopped
  • 1 lemon , (just the juice)
  • 2 tablespoons parsley , chopped
  • 4 slices white bread, toasted
  • 1 tablespoon olive oil

  • Preheat the oven to 180 degrees
  • Put the chopped tomato, lemon juice, and chopped parsley in a bowl and mix very well.
  • Place the toasted bread on a baking tray with olive oil and the tomato mixture.
  • Bake until the tomato is just warmed.
