4 teaspoons low-fat mayonnaise, avocado mayonnaise or homemade mayonnaise.
1 bunch spinach, washed and disinfected
1 cup arugula, washed and disinfected
200 grams goat cheese
4 avocados, ripe
salt and pepper

Preheat the oven to 180°C.
Place the bread on a baking tray and put it in the oven until toasted.
Spread mayonnaise on the bread, add a leaf of spinach and arugula, place a slice of goat cheese and avocado, season with salt and pepper.
Serve with a refreshing mint drink.
