  • 4 eggs
  • 16 leaves spinach
  • 4 slices yellow cheese
  • 4 slices deli ham
  • 1 avocado
  • 8 wholemeal breads

  • Beat the eggs, adding salt and pepper to taste. In a large skillet, apply a tablespoon of your preferred oil, pour in the eggs, spreading them into an omelet shape, without letting them burn. Flip and finish cooking, then cut the egg omelet into four proportional parts.
  • While you are cooking the egg omelet, toast the bread without letting it become hard; just lightly brown it.
  • Peel the avocado, remove the pit, and mash it into a paste, spreading it over the surface of the bread.
  • Add a slice of yellow cheese on the spread side of the bread, followed by the portion of egg, and then the slice of ham.
  • Finally, add four leaves of spinach without the stem for each sandwich.
