“Toast” with Gruyere, Mushrooms, and Thyme

1 cup white button mushrooms, sliced
2 tablespoons olive oil
2 pinches salt
1 pinch pepper
4 slices bread, Saníssimo® gluten-free, cut in half
1 package Gruyère cheese, (150 g) sliced
2 sprigs fresh thyme

Preheat the electric oven to medium temperature.
In a medium bowl, mix the mushrooms with olive oil, salt, and pepper.
Place some mushrooms on each half of the bread and top with slices of gruyere cheese.
Broil in the electric oven for 5 minutes or until the cheese is melted and the bread is toasted.
Garnish with fresh thyme, serve immediately.
