Meringue and Ice Cream Heart-Shaped Sandwiches

  • 4 egg whites 4 egg whites

  • 1 pinch cream of tartar

  • 1 liter ice cream, of your preference

  • Preheat the oven. Place the egg whites, sugar, and cream of tartar in a double boiler. Beat constantly until the egg whites are warm to the touch and the sugar is dissolved, about 3 minutes.
  • Then switch to a bowl and beat on low speed, gradually increasing to maximum speed. It should be beaten for about 10 minutes, until it is stiff, glossy, and forms stiff peaks. Mix in the vanilla.
  • Place the mixture in a piping bag and make hearts on a baking sheet. Bake for 1 hour to 1 hour and a half, or until firm, taking care not to let them brown. Let the hearts cool for 20 minutes.
  • Place one heart as the base, add a few tablespoons of ice cream, making sure it doesn't spill over the edges. Place another heart on top. Put in the freezer for 20 minutes.
