1 eggplant, sliced and previously baked in the oven with a little salt
120 grams fresh Mozzarella cheese, sliced, smoked

Cut the rolls in half and brush with olive oil.
Place the halves on a baking tray (with the olive oil side down) and bake for about 10 minutes.
Place a layer of basil leaves, the previously baked eggplant with salt, and the mozzarella cheese slices on top. Sprinkle with salt and pepper to taste and cover with the other half of the bread.
Return to the oven for another 5 minutes at very high temperature until the bread is golden and the cheese is melted, about 3 minutes.
Serve immediately.
