Portobello Sandwich

This delicious vegetarian sandwich features grilled portobello and vegetables inside a ciabatta bread.

  • 4 ciabatta breads
  • 4 portobello mushrooms
  • 1 tomato , sliced
  • 1/2 red onions, sliced
  • 2 cups lettuce, chopped
  • 1 cup mayonnaise
  • 6 tablespoons capers, chopped
  • pepper , to taste
  • 2 tablespoons Tabasco sauce
  • salt , to taste

  • Heat a skillet or grill. Cook the portobello mushrooms for at least 25 minutes or until well cooked on each side.
  • Cut the ciabatta breads in half.
  • In a small deep bowl, mix the mayonnaise with the capers, the Tabasco, and season with salt and pepper.
  • Spread a layer of special mayonnaise on each ciabatta bread.
  • Then on the bread, place 1 portobello mushroom, 2 slices of tomato, a bit of onion, and lettuce, and place the other missing bread on top.
