Sardine Sandwich

  • 4 slices wholemeal bread
  • 1 can sardine, in olive oil
  • 2 tablespoons Parmesan cheese, grated 2 tablespoons Parmesan cheese, grated

  • Slice the tomato very thinly and season with salt, pepper, and olive oil. Set aside.
  • Drain the sardines and mash them with a fork, add the grated garlic, lemon juice, and parsley.
  • Spread the sardines on 2 slices of bread, top with the tomato slices, Parmesan cheese, and pepper. Place the other slice of bread on top and heat them in the sandwich maker until golden brown. Serve immediately.
