Valentine's Omelette Sandwich

Delicious and romantic omelette sandwich replacing the bread with egg tortilla.

  • 4 eggs
  • 1 potato , girl with shell finely diced into miniature cubes
  • 1/2 onions, finely chopped girl
  • 1 can chipotle chile, blended
  • salt
  • pepper
  • 1 cup Manchego cheese, or Oaxaca
  • oil
  • 10 slices deli ham, salami or any deli meat in thin slices stacked on top of each other
  • 2 corn tortillas, or wheat flour

  • In a large non-stick skillet, heat a little oil.
  • Once it's nice and hot, fry the onion with the potatoes, adding salt and pepper.
  • While the potatoes and onions are cooking, beat the eggs with enough chipotle chili and a little salt.
  • Once the potato is soft, add the eggs and let cook on low heat, covered, until the top begins to set.
  • Flip the tortilla and finish cooking.
  • Cut the ham using a heart-shaped cookie cutter with the 10 slices of ham. If you don't have a cookie cutter, you can use a sharp knife.
  • Using the same heart mold or the same knife (trying to keep the same size), cut the egg to assemble a sandwich.
  • Using smaller cutters, cut the tortillas also into heart shapes.
  • In a small skillet, heat a little oil and fry the tortilla hearts in the hot oil until they are crispy and golden.
  • Once the egg is ready, take it out and immediately cut it with the large heart cutter.
  • Place them on a plate, and on top of each heart, add a little cheese, then place the ham heart on top, and finally add the egg heart lid.
