  • Prepare the shrimp by washing them very well, removing the shell, and using a knife to take out the intestines.
  • In a deep bowl, place half a cup of flour.
  • In another bowl, beat 1 egg and add enough cold water to make 1 cup, then add 3/4 cup of flour and mix a little with a fork. Add 2 tablespoons of sparkling water and mix a bit more.
  • Heat the oil in a deep pan and place a plate with paper towels next to the pan.
  • Dip each shrimp or vegetable first in the flour and then in the egg mixture. Place in the oil to fry and fry until lightly golden, about 2-4 minutes. You can fry 4-6 pieces at a time.
  • Remove from the oil and place on paper towels to absorb the excess oil.
  • Continue making more batter as you use it and fry all the vegetables and shrimp.
  • Mix soy sauce, sake, ginger, and chopped green onion in a deep bowl.
  • Serve the tempura on a platter and accompany it with the sauce.
