Prepare the shrimp by washing them very well, removing the shell, and using a knife to take out the intestines.
In a deep bowl, place half a cup of flour.
In another bowl, beat 1 egg and add enough cold water to make 1 cup, then add 3/4 cup of flour and mix a little with a fork. Add 2 tablespoons of sparkling water and mix a bit more.
Heat the oil in a deep pan and place a plate with paper towels next to the pan.
Dip each shrimp or vegetable first in the flour and then in the egg mixture. Place in the oil to fry and fry until lightly golden, about 2-4 minutes. You can fry 4-6 pieces at a time.
Remove from the oil and place on paper towels to absorb the excess oil.
Continue making more batter as you use it and fry all the vegetables and shrimp.
Mix soy sauce, sake, ginger, and chopped green onion in a deep bowl.
Serve the tempura on a platter and accompany it with the sauce.
