Smoked Guacamole

There’s nothing more delicious than guacamole, but if you were wondering if there’s a way to make it even tastier, this recipe to smoke it is the answer. To prepare it, you will need all the traditional ingredients, plus sea salt and the special touch of olive oil, and to smoke it, apple wood, which will give it a flavor that you will enjoy a lot.

  • 2 limes
  • 1 red onion, cut into julienne
  • 1 tomato, cut into small cubes
  • 2 tablespoons olive oil

  • Prepare your Weber® grill for low indirect heat (250° - 350°F or 121° - 175°C). Soak 2 handfuls of Weber® Apple Wood Chips in water for 30 minutes before grilling.
  • In a bowl, place the onion, chiles, and lime juice. Let it sit for 10 minutes and then add the tomato. Set aside.
  • Cut the avocados in half and discard the pit. Brush them with oil. Set aside.
  • Add two handfuls of chips directly to the coals, or use your Weber Original Smoker Box and close the lid of your grill. Once the chips start to produce white smoke, transfer the avocados to your grill with the cut side down over indirect heat for 5 minutes.
  • Remove the avocados from the grill and peel off the skin. Place the avocados in the bowl with the onion and tomato mixture. Mix until well combined. Serve with sea salt, cheese, and cilantro to taste.
