For the dough: in a blender, add the liquid ingredients and salt, blend for one minute.
Then add the yeast, and blend for another minute. Finally, incorporate the flour and blend until you have a uniform dough. Take it out of the blender and continue kneading.
Place in a bowl with a layer of oil and put in a warm place to ferment.
For the pizza: preheat the oven to 170°C.
Slice the onion into thin strips. In a skillet, place olive oil and the onion, add star anise and let it caramelize.
Pit the cherries, slice the Brie and Mozzarella cheese. Meanwhile, remove the stems from the arugula and season with olive oil, salt, and pepper. Set aside.
When the dough has doubled in size, knead a little more to release the air and roll out with a rolling pin to cover a baking sheet. Place the dough on the previously floured baking sheet.
On top of the dough, arrange the Brie cheese, Mozzarella, cherries, and caramelized onion. Add a bit of exotic mix, olive oil, and finally the pine nuts.
Bake for approximately 15 minutes or until the dough is cooked and slightly golden.
When taking it out of the oven, place seasoned arugula on top, balsamic cream, and a little truffle oil.
