Cherry, Brie, and Arugula Pizza

  • 150 milliliters water, for the dough
  • 50 milliliters whipping cream , for the dough
  • 50 milliliters olive oil , for the dough
  • 5 grams salt , for the dough
  • 10 grams yeast, or a packet, for the dough
  • 400 grams wheat flour, for the dough
  • 1 yellow onion , for the pizza
  • 5 star anise pods, for the pizza
  • 200 grams cherry , from the Northwest, fresh, for the pizza
  • Brie cheeses, for the pizza
  • Mozzarella cheese, for the pizza

  • 20 grams pine nuts, for the pizza

  • For the dough: in a blender, add the liquid ingredients and salt, blend for one minute.
  • Then add the yeast, and blend for another minute. Finally, incorporate the flour and blend until you have a uniform dough. Take it out of the blender and continue kneading.
  • Place in a bowl with a layer of oil and put in a warm place to ferment.
  • For the pizza: preheat the oven to 170°C.
  • Slice the onion into thin strips. In a skillet, place olive oil and the onion, add star anise and let it caramelize.
  • Pit the cherries, slice the Brie and Mozzarella cheese. Meanwhile, remove the stems from the arugula and season with olive oil, salt, and pepper. Set aside.
  • When the dough has doubled in size, knead a little more to release the air and roll out with a rolling pin to cover a baking sheet. Place the dough on the previously floured baking sheet.
  • On top of the dough, arrange the Brie cheese, Mozzarella, cherries, and caramelized onion. Add a bit of exotic mix, olive oil, and finally the pine nuts.
  • Bake for approximately 15 minutes or until the dough is cooked and slightly golden.
  • When taking it out of the oven, place seasoned arugula on top, balsamic cream, and a little truffle oil.
