World Cup Tuna Snack

  • 1/4 cups rice, cooked
  • 2 canned tuna, drained
  • 2 tablespoons onion, chopped
  • 2 tablespoons celery, chopped
  • 1 clove garlic, chopped
  • 2 tablespoons cornstarch
  • 2 eggs
  • 1 potato , large or two medium peeled and sliced
  • 1/2 kilos tomato , ripe
  • 2 chipotle chiles, canned
  • 1/4 onions, in pieces
  • granulated chicken bouillon
  • 1 clove garlic

  • For the sauce: Boil the tomato and onion. Once cooked, blend them with the chipotle, garlic, and broth.
  • In a mold, mix the cooked rice, tuna, onion, celery, garlic, cornstarch, and eggs. Set aside.
  • Heat a bit of oil in a pan and sauté the potatoes until soft.
  • Add the sauce to the pan and when it boils, incorporate the reserved tuna mixture.
  • Cook the stew until the liquid reduces.
