Bring the water to a boil, pour in the prunes, and hydrate them. Add the piloncillo and stir until dissolved.
Empty the prunes, piloncillo, and a bit of the water you boiled them in, if necessary, into the blender. Add the chipotle peppers (if you want it spicier, add more peppers), a pinch of salt, and blend until smooth.
Place the cream cheese on a plate and pour the sauce over it, reheat in the microwave, and decorate with the crackers around it.
