Spinach and Mozzarella Bites

  • Preheat the oven to 180°C. Place the spinach, parmesan cheese, 2 tablespoons of the walnuts, and garlic in a food processor or blender; put the lid on. Process until well combined.
  • Add the oil to the spinach mixture in a steady stream through the feed tube of the appliance while processing continuously until well blended. Use a spoon to place the mixture in a baking dish with a capacity of 2 to 3 cups; fold in the mozzarella cheese and the remaining 2 tablespoons of walnuts.
  • Bake the mixture for 15 minutes, stirring it at the 8-minute mark. Serve with whole grain crackers.
