Preheat the oven to 180°C.
In a medium pan, heat the oil and add the onion and garlic. When they are translucent, add the spinach, mushrooms, capers, and serrano ham, season with salt and pepper, and let cook for 5 minutes. Remove from heat, add the Philadelphia® cheese and mozzarella, and mix until integrated. Reserve.
On a floured surface, roll out the puff pastry to approximately 3mm thick, using a round lid to cut out two circles of 30 cm in diameter. On one circle, add the previous preparation and spread it without going over the edges.
Transfer the circles to a previously greased baking tray.
Brush the edges with egg and place the other circle on top, pressing firmly to seal the edges. Use a glass to press in the middle of the circle and use it as a guide to cut 12 portions.
Turn each slice so that the filling protrudes slightly and brush the crown with egg.
Bake for 25 minutes.
For the dip: in a bowl, mix the mayonnaise, cream, parsley, habanero chili, and melted cheese, season with salt and pepper, and mix until completely integrated.
Serve with the dip.
