For the chips: Preheat the oven to 200 degrees, form a soft dough with all the ingredients; if flavoring with onion, incorporate them cold. Let the dough rest covered until it doubles in volume. Degas, form small balls, bite-sized. Place on a greased baking tray. Let rise again, brush with an egg. Bake.
For the carre, seal in a very hot pan. Make a paste with honey, lemon juice, ground ginger, salt, and pepper. Transfer the carre to a baking tray, season, add sprigs of herbs and garlic. Bake at 200 degrees C, after the first ten minutes of cooking, add broth. It should be well cooked. Remove and let cool.
Slice thinly, to assemble bites along with the chips.
