Tapas Express

  • 2 baguettes
  • 5 tomatillos
  • 1 onion
  • 5 leaves basil
  • 1 can tomato purée
  • 2 cloves garlic
  • salt
  • 100 grams Parmesan cheese, grated
  • 2 tablespoons olive oil

  • To prepare the sauce: Peel the tomatoes and chop them into small cubes, as well as the onion, garlic, and basil. Set everything aside. In a pan, add 2 tablespoons of olive oil, then add the onion and season until it turns translucent, add the garlic, stirring continuously for 1 minute, then add the tomato and basil, continue stirring and mash in the pan with a masher. Then add the tomato puree, salt, and pepper to taste and turn off the heat once it has boiled.
  • Cut the baguette into ovals about one centimeter thick or to your liking. Heat the tapas on a griddle and set aside.
  • To serve: place the previously heated tapas on a platter, add the sauce, and finally sprinkle with grated Parmesan cheese.
