Tuna Quesadillas

Delicious flour tortilla with tuna and cheese, I love to prepare this dish for dinner, it is light because of the tuna. You can make them with corn tortillas if you wish or with chipotle tortillas.

  • 3 flour tortillas, (for making tacos)
  • 1 can tuna
  • 1/2 onions, small
  • 1 tomatillo, small
  • 2 leaves fresh cilantro
  • 6 slices Mozzarella cheese
  • sheets salt , to taste
  • pepper
  • 1 piece unsalted butter

  • Finely chop the onion, tomato, and cilantro leaves. Sauté in a little butter.
  • Add the tuna and stir with the vegetables. Add salt and pepper and remove from the heat.
  • Place a slice of cheese on the flour tortilla (from the middle towards one end). On top of the tortilla, add the tuna and on top of the tuna, another slice of cheese. Fold the tortilla in half.
  • Heat on a griddle or pan without oil. When the cheese has melted, flip the tortilla to heat it on the other side.
