Whole Wheat Cake with Avocado and Cherry Tomatoes

This super simple dish is like a kebab cake but Mediterranean style and has become one of my favorites, both for breakfast and dinner. Personalize your dish with the ingredients you like the most.

  • 500 grams wheat flour
  • 1 pinch dried oregano
  • 20 grams dehydrated tomato
  • 1 pinch pimentón
  • 1 pinch salt
  • water, warm
  • 1 avocado
  • 1/2 cups cherry tomato
  • 2 tablespoons olive oil

  • In a bowl, add all the ingredients for the dough: flour, a splash of oil, water, a pinch of salt, chopped sun-dried tomatoes, oregano, and paprika, and mix. Knead and add flour or water as needed until you achieve a dough that is easy to work with.
  • Once kneaded, take small balls of dough and roll them out individually to form a cake with your desired thickness, then cook in a skillet, flipping it over.
  • Now, all that's left is to fill it with whatever you like best; in this case, with mashed avocado and grilled cherry tomatoes. To finish, add a few drops of olive oil to enhance the flavor and aroma of this delicious dish.
