Zucchini Flower Quesadillas

Prepare these delicious Zucchini Flower Quesadillas, a Mexican recipe that is very easy to cook. Zucchini flowers are typical in the rainy months, although they can be found for a large part of the year. These Zucchini Flower Quesadillas are made with freshly cooked tortillas; you don't need a tortilla machine, just a press and a plastic bag cut in half.

  • 1/2 kilos masa dough
  • 4 bunches zucchini blossoms
  • 300 grams Oaxaca cheese
  • 2 cloves garlic
  • 1/2 onions, chopped
  • 2 tablespoons vegetable oil

  • Start by preparing the filling. Heat one tablespoon of vegetable oil in a medium-sized skillet.
  • Add half of the onion and the garlic and sauté for 2-3 minutes. Add the zucchini flowers and cook for 5 minutes or until well cooked. Season with salt and pepper and pour into a deep plate.
  • With a tortilla press, make tortillas with the tortilla dough.
  • Fill the tortillas with a bit of Oaxaca cheese and the zucchini flower filling. Seal the quesadilla well with your fingers.
  • Cook the quesadillas either on a griddle (if you want them without fat) or in oil if you prefer them fried.
